Coconut rice with black beans
Ingredients (for 4 people)
600 gr Boiled rice (frozen)
200 gr Coconut milk
1 dl Vegetable stock
½ ts Chili pepper diced
1 tbs Thyme
1 ts Oregano
1 ts Crushed dried chili
400 gr black beans

Preparation method

  1. Bring the coconut milk, vegetable broth and spices to a boil .
  2. When boiling add the rice
  3. When hot, add the black beans and heat through.
  4. Season to taste with salt and pepper.
