Brussels sprouts with chickpeas and shallots
Ingredients (for 4 people)
- 500 g small Brussels sprouts, frozen
- 200 g shallot whole
- 400 g chickpeas, frozen
- 1 ts cumin
- 1 tsp coriander iqf
- 1 tsp diced chili
- 1 tbsp olive oil
- 2 tsp sea salt

For the vinaigrette
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp brown sugar

Delicious with
- 40 gr chopped (peanut) nuts
- 3 tbsp Coriander iqf
- 4 tbsp yogurt
- Flatbread or naan

Preparation method

Preheat the oven to 200 ° C
Cut the shallots in 4 and mix all ingredients well before placing on a baking dish lined with baking paper.
Place in the oven for 20 "until the vegetables are nicely colored
Meanwhile, mix all the ingredients for the vinaigrette.
After 20 ’(when the vegetables are fully cooked), sprinkle the vegetables with the vinaigrette
Mix the yogurt with the coriander and season well.

Before serving, sprinkle some chopped nuts over the vegetables and a little extra cilantro if you like.

Delicious with flatbread or naan
